Cooking school

One the highlights of our time in Vietnam was the food. It is all mouth-wateringly delicious…and so cheap! I’m craving some right now, just thinking about it.
We felt very inspired to learn how to make it ourselves, so booked into a half-day cooking class at one of the restaurants in Hoi An.

First, we started with a trip to the markets – more for our instructor to tell us about the ingredients, rather than to buy them there and then. Thank goodness…as we did, in fact, have chicken on the menu.

When we returned to the cooking school, the raw ingredients were laid out for us.

And we were each given a chopping board and a cleaver and set to work. A 6 year old with a cleaver is a scary sight. Luckily, The Impossible Princess started to lose interest in the chopping phase and went off with some of the restaurant staff to catch guppies in one of the ponds instead.

We sliced and diced, fried and grilled, and after four hours had produced four dishes: spicy grilled pork, chicken with lemon leaf, rice paper rolls with prawns (including making the rice paper) and a green papaya salad with pork, all of which we were then served at a table in the restaurant.

This is our green papaya salad. We became addicted to this…but are yet to find where (and when) we can source green papaya in Melbourne. If anyone knows, I’d love some tips.
